What's for Dinner, Mon., June 17, 2019

We made sandwich fillings for tonight, with a couple of different breads from which to choose. There's chicken cilantro-pesto with cucumber filling and barbecued pork. The pork is diced and in sauce. The breads are brioche (of course, my fave), whole wheat, and pumpernickel.

I made a tossed salad with raw vegetables. Turkey bacon crumbles for the top, along with Chinese noodles.

Dessert is black grapes.

Tart cherry kombucha for me; white wine for the RG.

Buy the firm tofu that comes pre-cubed. Drain it, then dry it well with paper towels. Make a marinade with about 1/4 cup each soy sauce and hoisin sauce, a grating of fresh ginger, and at least one minced garlic clove—more is better. A few pepper flakes are optional. Mix the marinade with the tofu. At this point, you can also add a few cubed firm vegetables, such as carrots. Heat a large cast iron skillet until it smokes. Add a bit of neutral oil and dump in the marinated tofu. Don’t disturb the tofu until it starts to brown and form a crust. Turn the tofu a couple of times—don’t overwork it, you want it crusty. Take the pan off the heat, sprinkle with sesame oil and chopped green onions, and serve forth with rice.

The cast iron skillet is important here to get a good crust on the tofu. Don’t use a wok. Also, I don’t recommend making this unless you have good ventilation.

Arancini to start, followed by Ensalada Caprese. The main course will be Citrus Scallop Linguini, accompanied by a V. Sattui 2017 Dry Riesling. Dessert will be crème brûlée, accompanied by a small glass of V. Sattui Moscato Frizzante, and finishing up with an espresso.

The wife is off today, so we are extending my Fathers Day celebration by cooking up a nice meal (actually, she is the chef and I am simply her devoted assistant).

6. We're going meatless tonight

Pasta and veggie bake: rotini pasta, eggplant, yellow squash, broccoli, grape tomatoes, bell pepper, onion, garlic, oregano, basil and parmesan cheese.

Near the end of cooking, I put some mozzarella on top to melt.

I haven't thought of dessert. We have some popsicles in the freezer.

Homemade. I got a tiny rice cooker recently. Does a way better job than me with a pan. Idk why?? Lol! I almost always have rice in the frig now.
