Ingredients:
two nice plump tomatoes
8 cherry Tomatoes
1/2 white Onion
1 strand of chopped up chives.
three whole mushrooms.
pepper
powdered Garlic
Two tablespoons of parmesan cheese
half cup of flour for thickening
V-8 Juice as a base.
1/8 a stick of real unsalted Butter
Pince of Mrs Dash, garlic and herb spice.

Directions:
place 1/8th of a stick of real butter in pan on low heat till it melts.
Chop up 1/2 onion and add to the butter along with the chopped chives.. let it get soft and simmer.
Chop up mushrooms and add to the mix with a pinch of garlic powder.
Place in a blender sliced up plump tomatoes with eight cherry tomatoes. Add just a little V8 juice at the bottom of the blender and whip up on high till fully blended. Once blended, add to the pan which contains the onions and mushrooms. Add a half cup of flour and stirr till thickened, and raise the heat a little, stirring occasionally. Set on low heat...add a pinch of Mrs Dash garlic and herbs and stir.
Place a lid on the pan, and let it sit at very low heat til its ready for eating! Enjoy!

(33,643 posts)This recipe sounds awesome, but if it were me, I'd do it w/o the mushrooms until the soup stock 'tastes right', then I'd drop raw mushrooms into it for about the last 10-15 minutes.
Turning a stock of freshly blended tomatoes and onions and herbs and such into a proper tasting 'soup' takes on the order of 1.5-2 hours of simmering.
That's a lot a time to cook mushrooms, esp when they're sauteed first.
In my experience, they'll tend to get quite rubbery ...
Hope I'm not stepping on toes, I just make soup A LOT, it's like my fave thing to make

(41,831 posts)if you took some basic corn tortilla's you can cut them up and add them to the mix...and make it into a tortilla soup... maybe with a touch of something spicy (like a little Mexican hot sauce) and it should be good to go as well! Enjoy!
