2 cucumbers, sliced thin
1/2 white onion, thinly sliced
1 teaspoon salt
1/2 cup sour cream
1 teaspoon sugar
3 tablespoons white vinegar
1 tablespoon chopped fresh dill
Spread cucumbers and onions on a platter, season with salt. Let rest for 30 minutes. Blot excess moisture from cucumbers.
Stir together sour cream, sugar, vinegar, and dill.
Fold cucumber and onion slices into sour cream mixture.
Serve immediately or chill for up to 8 hours. Makes approx. 6 servings.
******** I saw this on Pinterest last night: if you have too many cucumbers from your garden (like I do), you can keep them good for 1 week if you wrap each cucumber in a paper towel and then store the wrapped up cucumbers in a zip top bag in your refrigerator. I haven't tried this yet but I wrapped up 12 cukes from the garden this afternoon, so I hope it works!

(7,754 posts)the cucumbers with salt and then press with a full tea kettle or something heavy on top of a plate for a few hours. We then rinse them and put them in the dressing, (which uses apple cider vinegar and garlic as well as the other ingredients), and chill for an hour or so. They super absorb the flavors from the dressing and onions. Delicious.

(9,841 posts)It also needs (IMHO) a good sprinkle of carraway. Since my dill plants usually burn up before the cucumbers get started good, I have been using carraway and like it better.
