What's for Dinner, Sun., Sept. 1, 2019

Grilled sausages with cranberry beans. Grilled corn with red onion.
Breaded and fried okra with sriracha sauce.
Two ciabatta slices, toasted, with pepper garlic sauce and a crepe made with chopped basil.

Dessert: freshly baked nectarine tart.

Cold pomegranate tea.

the stuffing is ground beef, rice, eggplant, celery, onions, carrot, bell pepper, garlic and basil.

spaghetti w/ butter and parmesan

sliced tomatoes

lemon crunch cake for dessert

The Landlady(!) wants to know how large your zucchini are. Until this year, she always had several plants in her garden and we were overwhelmed by the bounty! We often had what we called Jurassic zucchinis.

good sized... about a foot long and plenty fat

She gave me the tomatoes and the eggplant too. The eggplant are small. I think they're Japanese eggplant

2. Roasted chicken

We're in the mountains and it's cold and damp tonight so we're cooking indoors.

Chicken thighs and legs marinated in lime juice and fresh herbs and spices. They'll be roasted and basted.

Brown rice and Leseure peas along with some freshly baked rolls.

Chocolate mousse cake and vanilla ice cream for dessert. (I shouldn't have either but it's a holiday weekend so, WTF?)

ETA: Enjoy your okra, NJCher! I hate okra. (wink)

4. Brazilian Rice and Baked Chicken

The Brazilian Rice is a new to me way of cooking rice. I use a rice cooker from a Japanese store.

INGREDIENTS
1/4 cup vegetable oil
1 cup white (long grain) rice (I use jasmine), washed
2 cups water
1 medium onion, finely chopped
3 cloves of garlic, minced
Pinch of salt

INSTRUCTIONS
Put the water to boil in a tea kettle.
In a large pot, heat the vegetable oil over medium high heat.
Add the onion and garlic and sauté until translucent. (Be careful not to burn it!)
Add the raw washed rice and cook, stirring occasionally so it doesn't burn, until it starts forming clumps.
Add the boiling water and the salt, cover and lower the heat to the lowest setting.
Cook for 20 minutes or until there's no more water in the bottom. (You will see some holes forming in the surface and you won't hear any more water!)
Turn the heat off and lift the cover slightly.
Let the rice sit untouched for 5 more minutes.
Fluff the rice with a fork and serve.

I'm in Florida and since we might evacuate tomorrow to friends further inland, I wanted to give the husband a nice hearty meal. Me? Cheese and spinach omelette. Then some amazing Rebel low carb ice cream!

It's nice and rare Boar's Head roast beef. Yum.
We went to the Highland Games today and ate a bunch of fair food (including funnel cakes, of course!), so we had a light dinner.

sounds like it. The RG tells me they have the games in many different locations, i.e. each area has a game? I think that's what he said, anyway. He went last year.

It was the Virginia Highland Games. I had never been before, it was a lot of fun. Great shopping, too- I got a lovely wool sweater and a cool scarf pin of our clan crest and motto.

One of the athletes almost the broke the world record in the sheaf toss. He missed it by literally an inch. It was exciting to watch!

Here's the world record 37' 1' toss from back in June (think I recognize some of the guys, pretty sure the bald guy with the beard got the caber over all three times yesterday).

I can't even fathom what it would take to throw something that high.

It was funny to watch them walking around in their skirts and crazy socks.

a snacky supper, good for tv watching (tonight's choice: last episode of the second season of Mindhunter). We had buffalo chicken dip with carrot and celery sticks, shrimp with cocktail sauce, younger son's favorite little smokies in barbecue sauce, guacamole, and mango salsa with tortilla chips.

First time I made it at home. From the "Taste of Thai" website. Came out pretty good. I added a sliced serano pepper
