Impeachment Pie..........?

Ok when this goes off I want to make an impeachment pie.... Any good recipe for a peach pie?
Or any other pie that would be apropos.......

1. Just any ol' fresh peach pie

With homemade mint extract (mint and Everclear), serve with a whole mint leaf and slice of peach on top. Maybe a scoop of peach-mint ice cream, or just good vanilla.

6. Do you remember Watergate salad. It wasn't really a salad, rather a vile

concoction of pistachio flavored pudding, crushed pineapple, marshmallows and cool whip. It was more like a dessert than a salad.

The cake was pistachio flavored. I don't remember if it was good or not. It has been years since I tasted it.

3. In my mind peach and mint are going to be hard to balance

So .. I thought what if we keep the peaches fresh and use them like a fresh strawberry pie with pastry cream and a glaze? Maybe a hint of basil and some source of almond flavor?

Then pair that with a light ice cream or even ice milk. Flavored with milk and white chocolate and mint and just a pinch of white pepper?
