What's for Dinner, Mon., Dec. 2, 2019

Pork meatballs in tomato sauce.

Eggplant sauteed olive oil with garlic, oregano, and roasted pepper sauce. The eggplant goes well with a slice of cranberry pecan bread with a little butter on it.

I made the salad, for which I used my spiralizer. It has green apples, cabbage, and peanuts. The RG made the sauce, which is light and creamy.

For dessert, we're splitting a slice of tres leches cake. Hot ginger tea to go with it.

Just what is called for after a foot of snow and another 8-10 inches to come.

I'll probably also have a slice of oatmeal bread toast w/ peanut butter, and some apple slices.

I forgot to say: Dad and Sis got Swedish meatballs over egg noodles and steamed broccoli.
