What's for Dinner, Wed., Jan. 22, 2020

For an appetizer, guacamole made by the RG. I picked up tortilla chips when I was out.

Next up is sauteed pork strips with toast that is topped with apple slices.

Also cannellinis with broccoli rabe which has been sauteed in garlic and olive oil.

No dessert tonight; maybe some mandarins later.

And I have to make fresh ginger tea to get me through the night! The RG showed me an incredibly easy way to make it, especially if one can get organic ginger. Simply wash it, pound it with a kitchen mallet, and add it to filtered water. It is incredibly strong when the peeling is left on, so you get a lot more mileage from the ginger than if it was peeled.

Also this evening I'll be baking cauliflower-cheese muffins for breakfast tomorrow.

I've got short ribs in the crock pot with a couple of hours to go.

Leaning towards kale and sweet potato for the sides.

FLFC will certainly sample the ribs, but he's fickle and may desire something else.

not homemade this time. It's a frozen "supreme" pizza, and I added ham, extra cheese, and garlic

Dad and sis got a skillet meal of red beans & rice w/ smoked kielbasa, and a side of yellow squash sautéed with garlic in olive oil.

fresh zucchini with garlic...for dessert a 321 cake...gluten free cake mix, three TBL, 2 TBL water and microwaye for about a minute...more or less depending on you oven...tsp of Nutella as icing...espresso with a little cream.
