What's for Dinner, Sat., Feb. 29, 2020

We each made a Chinese dish. The RG made chicken with vegetables and I made beef with broccoli and peanuts.

Might have this over rice. If we do, it will be one of those rice packets from Trader Joe's since I threw out our rice cooker when I was doing a low carb diet.

In addition, we will have the same cookies from last night, only we're baking some up fresh from dough we stored in the 'frig. Snickerdoodles.

I had a bag of mixed beans that I cooked with ham hocks, onions, a can of crushed tomatoes, and some chili powder. Not bad, although I think I’ll be eating it all week.

(South American style unleavened cornmeal cakes) with black beans, avocado, and Monterey Jack cheese. I made a sort of pico de gallo with tomatoes, onion and cilantro, and dessert is mango and strawberries dressed with tangerine juice.
