I tasted this wonderful concoction for the first time on New Year's Day, 2020. I had gotten a couple cans of whole jalapenos at Dollar Tree because for a long time, they didn't have slices, and I like jalapeno chicken, often.
At the beginning of January, I also had bacon, cream cheese and shredded sharp cheddar. So I made a batch. Sliced each jalapeno in half, left the stem end uncut, mixed the cream cheese and cheddar together, added a dab to each pepper and used a half a strip of bacon on each pepper. And I made another batch today, because I had all the ingredients handy again. This batch was prettier than the first batch
I need to remember to open the kitchen window and turn the vent fan on before I start frying batches, because the aroma really cleans out my airways. Well worth it!

(46,166 posts)Just a few moments on the cooler side so the cream cheese doesn't run out. But we've used toothpicks to keep them closed. And it saves the runny eyes.
maybe next summer I'll make a batch and take it to my daughter's. They have a cooker, smoker I used less cheese filling this time and they didn't leak as much.

(46,166 posts)You know, still soft enough to wrap around but cooked enough that it gets finished on the grill.
I have to be careful with these.
