What's for Dinner, Wed., Dec. 2, 2020

Soup with knodels. The broth is beef, but it's thickened. The knodels are mixed with ground bison.

Salad. Yes, the same salad I made 2 days ago and that I stored in a stainless steel bowl with a plate on top. It is crispy and delicious and no way can you tell it was 2 days old. Has chopped apples and fennel.

Variety of breads to munch on with the soup. Some are toasted with cheese on top. Toasted raisin bread, fried bread, and Polish bread with goat cheese.

For dessert, hot chocolate with whipped cream and butter cookies.

1. We'll start w/ a cup of homemade soup

turkey noodle soup. The noodles are some whole wheat spaghetti I'm not likely to use for anything else. I just broke them up to get them to a more manageable size. Carrots, celery and onion in the soup, which of course was made with the Thanksgiving turkey carcass.

Then we'll each have a slice of leftover quiche from yesterday.


I delivered a meat pie to my Dad for supper. While I was there I raided his candy dish for "fun-size" candy bars. That's our dessert (but I'm betting Al will also have some ice cream.)

3. OMG - Knodels!

I grew up with knodels which, in our house, were a bread dumpling (bread, flour, egg, salt, pepper) boiled in water for about 20 minutes. My folks made them with roast pork or chicken. Then added a can of Campbell's Cream of Mushroom soup into the gravy and oh boy! I raised my kids on them and they LOVED them. Seldom make them anymore as the carb count is ridiculous and the diabetes gets SO in my way.

So our dinner tonite was cold sliced leftover filet, romaine/tomato salad, garlic bread, and bosc pears. And some more of the pecan pie bars.

The original knodel recipe came from my grandma and now my son, a really good cook, makes them so we are on at least the 4th generation of gobbling knodels.

With the bison it may have lowered the carbs. But oh, are they good. The bread soaks up all the meat and veg flavors. The overall effect is of this warm, soothing soup. Did I ever enjoy it!

Went to Seattle Fisherman's Terminal seafood market. Got a nice fillet and some lemon garlic sauce and a tub of their clam chowder.

Covered the halibut with the lemon garlic sauce then rolled in bread crumbs and cooked in EVOO. Had a big green salad with tons of veg and a cup of chowder too.

One last piece of pecan pie...
