It'll depend a bit on the size of the bird and how you like your turkey.

You can get a sous vide cooker for around $100-$250 if you shop around or wait for a sale. The first one my wife used was the post-style one made by Anova, it's around that price point.

It's worth every penny. My brother-in-law splurged and ordered five of the real deal Kobe beef steaks a couple years ago and my wife used the sous vide machine. It was heavenly for all involved but for her, as a chef, it was a religious experience.
