(8,083 posts)Sometime around the Green Revolution. Since then, there has been an increased problem with gluten issues with people. There are:
2.4 million U.S. citizens that have Celiac Disease, and that doesn't include those that haven't been diagnosed.
As many as 18 million U.S. citizens with Non-Celiac Gluten Sensitivity.
5 million diagnosed with Fibromyalgia, gluten issues are connected to this.
Being gluten-free is NOT at all like the low fat, low carb or whatever stupid trend of the week. Gluten causes symptoms of bloating, constipation, diarrhea, abdominal pain, headaches, severe fatigue, asthma, brain fog, blisters, rashes, depression, anemia, anxiety, joint and muscle pain, dental issues, weight loss or gain, malnutrition, swollen joints, and insomnia.
In total, there can be up to 250+ symptoms that are not all in a persons head, feel free to ask any doctor/dietician/gastroenterologist that specializes in gluten sensitivity. Just because this is your opinion doesn't actually make it a fact.
Speaking of sugar, U.S. sugar production also changed in the 1970's which is the real threat called High Fructose Corn Syrup. Even though this goes through 3 different processes to make, it's still cheaper than sugar so the food companies use it in their food production. As long as consumers keep buying it, it will be continued to made without any thought to the health consequences.
