I love turkey. People think it's difficult to cook, because they only fix it once a year and make that entire dinner far more complicated than it needs to be.

Back when my sons were growing up, I'd fix a turkey every other month or so. Often in the middle of the week. I was a stay at home mom, which helped, so sometimes they'd get home from school in the middle of the week and a turkey would be baking in the oven. I do think they appreciated it.

Sometimes I'd stuff it, sometimes I wouldn't. There would always be mashed potatoes and gravy. My go-to other veggie was peas. Or maybe I'd have sweet potatoes instead. In short, I'd have some of the elements of my standard Thanksgiving dinner, but scaled back.

And yes, the way the house smells is beyond compare.

One of the great things about my (now ex) husband was that I could say to him, "I don't feel like cooking this Thanksgiving. Let's go out." And he was always completely agreeable to that. And while I always liked not having to cook or clean up, it was a let down to come home from the restaurant and the house didn't have that wonderful scent of turkey dinner. Plus, no leftovers. But I REALLY appreciated that the times I suggested we eat out for the holiday he never complained and always made great reservations. We may be divorced, but he had, and no doubt still has, wonderful qualities.
