I dont even put pepper in mine, people can add that at the table if they like. Potatoes, milk, butter, salt. No cream cheese, sour cream, garlic, etc. and NO white pepper - if it has to have pepper it should be visible! Added ingredients (such as cream cheese) make for a nice potato side dish but its not mashed potatoes.
The next day (if theres any left) Ill make Refried Mashed Potatoes. Melt a lot of butter in a skillet and sauté the leftovers, scraping the bottom of the pan often to get a lot of brown crispy stuff mixed in.
