I roomed with someone who had a girlfriend from Turkey. She made this potato salad and I am never going back!
Skin on or off potatoes. Boiled with salt to tender. Put em in a bowl and kind of chop/mash them.
Chopped Cilantro. Lots man. Lots.
Red and yellow bell pepper.
Mix these.
Then mix the dressing.
Pour over and refrigerate.
Lemon juice. 1/4 cup or so
Olive oil -same amount as lemon juice
Sea salt and pepper to taste.
(The cilantro could be parsley or dill)
Use lots of whatever fresh herb you like.

Flavor. Raw onions taste like rotting garbage soaked in battery acid.
