14. Baked Potato Chowder

Hadn't make this in a while, so made some last week, was so perfect for a cold grey day, Decided to make some more this week. Had Baked Potatoes on Monday, put in a few extra to bake for the chowder. They are standing in the fidge and I will use them for my chowder tomorrow.

This is an easy recipe.
5 or 6 slices bacon
medium onion -chopped
2or 3 stalks celery-chopped
3 tablespoons flour
3 medium baked potatoes, two or 3 days old, peeled and diced
Quart chicken stock
3 1/2 cups milk
1/2 cup cream or Mexican crema
Salt and pepper to taste
Shake or two of Worcestershire sauce
few shakes tabasco pepper sauce

Fry bacon until crisp, Drain on paper towel, when cool crumble into small bits. Add onions and celery to bacon drippings and sauté until soft. Stir in flour, let cook a minute or so. Add chicken stock and milk stir to mix, then add potatoes, crumbled bacon, seasonings and let simmer 20 minutes or so. Stir in cream and its ready to serve. Makes 2 quarts; left over chowder freezes well.

If you happen to have an ear of fresh corn, cut corn off cob and sauté the corn along with the chopped onions and celery.
